Roasted Brussels Sprouts with Apple and Ham
With apples for sweet and ham for savory, this vegetable- and fruit-packed entrée is a taste sensation.
Ingredients:
- 12 ounces fresh Brussels sprouts or 1 package (10- to 12-oz.) frozen Brussels sprouts
- 2 cooking apples (such as Granny Smith, Idared, Northern Spy, Rome Beauty, Stayman, Jonagold, Pink Lady, Golden Delicious, Melrose or Mutsu)
- 1/2 large red onion, peeled and thinly sliced
- 2 tablespoons vegetable oil
- 1 (1/2-inch thick) boneless ham steak, cut into 3/4-inch pieces (about 8 oz.)
- 3 tablespoons honey mustard
- 1/4 teaspoon pepper
Directions:
- Preheat oven to 425°F.
- If using fresh Brussels sprouts, cut away bases and stems. Remove any loose outer leaves. Cut Brussels sprouts in half.
- Cut away apple cores (or tough centers). Cut each apple into 8 pieces.
- Line 15- x 10- x 1-inch baking pan with foil.
- Place fresh or frozen Brussels sprouts, apple pieces, and onion in prepared pan. Drizzle with oil. Gently stir until all ingredients are coated with oil.
- Bake, uncovered, for 15 minutes. Remove pan from oven.
- Stir ham and mustard into the vegetable mixture. Sprinkle with pepper.
- Bake, uncovered, for 10 to 15 minutes more or until sprouts are tender. Serve immediately.
