Baked French Toast with Berries
Indulge yourself this weekend with this delicious French toast. It’s seasoned with cinnamon and topped with berries
Ingredients:
- 2 teaspoons butter
- 4 eggs
- 1 cup milk (fat free, 2% or whole)
- 3 tablespoons sugar
- 2 teaspoons vanilla
- 1/2 teaspoon ground cinnamon or 1/4 teaspoon ground nutmeg
- 6 (3/4-inch-thick) slices whole grain bread
- 2 cups fresh berries of your choice (sliced strawberries, blueberries or raspberries)
- 1 tablespoon maple syrup or honey
Directions:
- Preheat oven to 425°F.
- Use butter to thinly coat the entire top surface of a large cookie sheet. Set aside.
- In shallow dish, use a fork or wire whisk to beat eggs until combined.
- Stir milk, sugar, vanilla and cinnamon (or nutmeg) into eggs.
- Soak a bread slice in egg mixture for 30 seconds, and turn to coat the other side for 30 seconds. Place on prepared cookie sheet.
- Bake bread, uncovered, for 12 to 15 minutes or until lightly browned.
- Turn bread over. Bake, uncovered, for 4 to 8 minutes more or until golden brown.
- Meanwhile, in medium bowl, stir together berries and maple syrup (or honey).
- Serve bread hot topped with berries.
