Pork and Nectarine Picadillo

Pork and Nectarine Picadillo
You’ll say “adios” to plain old ground meat and salsa after you taste one bite of this dynamite combination of savory meat infused with salsa, fruit and ground cinnamon.
Ingredients:
- 1 pound lean ground pork, ground turkey or ground beef
- 1 3/4 cups thick and chunky tomato salsa
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons dried oregano leaves
- 1 1/2 cups cut-up, pitted fresh fruit of your choice (nectarines, pears, apples, peeled peaches and/or peeled mangoes)
- 2 1/2 cups hot cooked brown rice
Directions:
- In large skillet, cook ground meat over medium heat until no longer pink, stirring frequently to break meat into bite-sized pieces. Drain off any fat, carefully keeping meat in skillet and pouring off any liquid.
- Stir salsa, cinnamon and oregano into meat in skillet. Reduce heat to low.
- Cover and cook for 2 to 3 minutes or until mixture is hot. Stir in fruit.
- Cover and cook for 1 to 2 minutes more or until fruit is warm. Serve over hot cooked rice.
