Stir-Fried Beef and Beans

Prep tip: Look for stir-fry sauce in the Oriental ingredient section of your grocery store. If you can’t find it, just stir together 1/4 cup reduced-sodium soy sauce, 2 tablespoons brown sugar, 1 tablespoon cider vinegar, 1/2 teaspoon garlic powder and 1/4 teaspoon crushed red pepper. This recipe tastes great whether you purchase stir-fry sauce or make your own!
For a change of pace: Substitute 8 ounces of fresh asparagus or 1 package (10 oz.) frozen cut asparagus for the green beans. If using fresh asparagus, break off woody stems where the spears snap easily. Cut spears into 1 1/2-inch lengths.
Stir-Fried Beef and Beans
No need for takeout! Use this easy recipe to create a delicious stir-fry entrée in your own kitchen. It combines bright green veggies, steak or ground beef, and a savory sauce.
Ingredients:
- 1 pound boneless beef sirloin steak or 3/4 pound lean ground beef
- 8 ounces fresh green beans or 1 package (10 oz.) frozen cut green beans
- 1 tablespoon vegetable oil
- 1/2 large red onion, peeled and thinly sliced
- 1/2 cup classic stir-fry sauce
- 2 cups hot cooked brown rice (optional)
Directions:
- If using steak, trim fat from steak. Very thinly slice steak into bite-sized pieces.
- If using fresh green beans, cut off ends and cut beans into 1- to 1 1/2-inch lengths.
- In large nonstick skillet, heat oil over medium-high heat. Add onion.
- Cook onion, stirring constantly, for 3 to 5 minutes or until tender. Remove onion from skillet.
- Add steak strips or ground beef to hot skillet. Cook, stirring constantly, for 2 to 4 minutes more or until no longer pink.
- Remove beef from skillet and add to onion.
- Add fresh or frozen beans to hot skillet. Cook over medium-high heat, stirring constantly, for 3 to 5 minutes or until crisp-tender.
- Return beef and onion to skillet with the green beans. Drizzle with stir-fry sauce.
- Cook and stir until meat and vegetables are hot and combined. Serve over brown rice (if desired).
